What do you do?

We do cakes, cupcakes, cookies, donuts, and pretty much anything baked. We serve normal day-to-day needs, special occasions such as birthdays and anniversaries, holiday orders, and even custom wedding designs. If you don't see an item in our online store, email us at for a consultation and quote.

Want to try a small something in person before placing a custom order? We're open daily from 10am to 7pm inside of the 7th Street Public Market located at 224 E 7th St.

We also do lots of volunteer work in our community! We think, even if it's just a little, chipping in to support the people around us is imperative to the success of us as a bakery and as members of Charlotte. We want to work WITH our surroundings and never make our surroundings work FOR us. For ways to get involved email us at

What are your products like?

Our focus at The Gâteau Baking Company is to serve gourmet baked goods using the highest quality local ingredients to support the growth of our community. We use all natural, unrefined sugar and flour that not only taste good but help us (and our neighbors) be truly local eaters. We don't play around with phony extracts, fake butter, or ingredients at the store that can be found locally. Each cake comes with three layers of cake and two layers of filling, and is covered in cream cheese or buttercream frosting.

How long does a custom order take to fulfill?

We work very hard and love what we do, but we're only human. Until we have our robots in place, please give us enough lead time to complete your order by placing your order at least three days in advance. Weddings require booking at least one month in advance. We look forward to hearing your needs for birthday cakes, make-up cupcakes, "thank you" cookies, and everything in between. If you need a rush job, just call or email us and ask to speak with a baker!

How do you get your order?

You come pick it up at 224 E. 7th St. We're working hard to get delivery as an option so until then, just pick ups for now! We're open daily from 10a to 7p. To arrange an earlier or later puck up, just email us and we'll see what we can work out!

Where do you source your ingredients?

We love supporting local businesses! Our goal is bring the community together through food- with that goal in mind we try our hardest to shop local and organic as much as possible.

  • Fruits: We enjoy shopping around local farmers markets for all our produce! Noda Farmers Market and Sustainable Saturday's at Pure Pizza on Central Ave. are our favorites.

When we need products that we don't have a local farmer for we like to shop at Healthy Home Market! Healthy Home Market is a locally owned and operated grocery store (with only 3 locations) dedicated to organic, local, all natural goods. We know we can count on them in a pinch to supply us with all the best ingredients.

Where do you come up with your recipe ideas?

We recognize that in an industry as old as time itself, we can't always be completely original so we often take classic goods and add a our own bold twists. Our sea salt chocolate chip cookie for example, is made with dark chocolate cocoa nibs, Kentucky Bourbon Barrel Oak Smoked Salt, and Hawaiian Black Lava Salt. Through creativity and excitement, we find ways to make timeless products exclusive to our bakery. 


The inspiration to bake is everywhere! When we're at the 7th Street Market looking around at all Greeneman Farms' jams we can't help but allow their flavors to inspire some areas of our cake flavors. Why not put a handmade pistachio jam in our cake batter? It matches perfectly with the sweet champagne and handcrafted pastry cream we use to make our "Butter Half of the Bottle". Shopping all the beautiful flowers around Nectar Floral inspires our love of Spring flavors which can be found in the form of a lavender sugar cookie! 


Our recipes are the products of countless hours in the kitchen trying and trying again to make the perfect pastry. 

What size cake should I order?

Here's a helpful breakdown of cake sizing!:

6" cake: 6-8 servings
8" cake: 8-12 servings (most common)
10" cake: 12-18 servings

Two tiered cake: 6" & 8" cake: 20-25 servings
Three tiered cake: 6", 8", & 10" cake: 35-48 servings

Things to keep in mind: these numbers are if you cut your cake graciously and DO NOT apply to wedding cakes (wedding cakes are cut much differently). Often times, because our cakes are so tall, you are able to serve much thinner slices without making your guests feel like you're being skimpy on the cake. Also, the larger the cake is in diameter, the less tall and thin the cake will appear.

Where else can I find your products on the shelf?

Pure Pizza on Central Ave! They are the exclusive carrier of our Gluten Free Dark Cocoa Brownie. They serve it up warm with a huge scoop of local vanilla bean ice cream!

Golden Cow Creamery! Cookie sammies anyone? That's a yes for us!

The Westin! We provide the pastries hotel staff leaves in your room for you during an important stay!

Are your products gluten free and/or vegan?

They sure can be! While eating vegan and gluten free is not a core value we instill in OUR everyday lives, we understand that it might be one of yours and we respect that wholeheartedly. We want our friends to enjoy our goods no matter what their dietary restrictions. Gluten free, vegan, soy free- bring it on! We don't want you to go to another bakery to receive a lesser quality product just because you may have an alternative diet. We have amazing cakes and can't stand the idea of excluding you! What do I do if I or a guest have certain allergies to nuts or other ingredients? Can you accommodate?

Before placing your order, please inform us via call or email if a person in your party has a food allergy. As in most cases, the kitchen we use is also used to produce products with peanuts, tree nuts, soy, milk, eggs and wheat. While we take steps to minimize the risk of cross contamination, we cannot guarantee that any of our products are safe to consume for people with severe peanut, tree nut, soy, milk, egg or wheat allergies.
